Menu Monday

This week is a little crazy at our house so the menu is a little....well...short. I didn't really "find" them anywhere--I just threw them together. It's a few of my husband's favorite's because I just love him so hopefully you'll enjoy! 


Monday- Southwestern Chicken, Mashed Potatoes, Peas, and Homestyle Mac & Cheese

Here's what you need:


Before
It's kind of simple---the chicken is the only thing that takes time to bake. Everything else is listed on the package, but as you can see from the picture below---the husband enjoyed it! 
After
Tuesday- Chicken Pesto Pasta & Mixed Salad- this is a pasta I have been fixing for years. I added pine nuts when a friend gave me the idea (Thanks Summer) 
Here's what you need: I forgot to get out the chicken---

1. Boil water for noodles
2. Cook chicken in separate saucepan with olive oil (sorry it's not pictured). Add minced onions, and garlic salt. Cook until browned. 
3. Add the pine nuts---boy I forgot to picture a lot. Ooops. 
4. When water is boiling add the noodles until soft. Drain the water. 5. Combine the noodles and the chicken. 
6. Add the pesto. 
7. Prepare the salad & add almonds on the top and add desired dressing. 
8. If you like you can also severe this dish with garlic bread. Yum! 

Dessert Monday- Rice Krispie Treats- since I have some extra time I have been trying to prepare a special treat for my husband on Mondays. Today's treat was rice Krispie Treats. He LOVES these! 

Here's what you need:
Let me just add that you can't use the "good for you butter" it doesn't work out. 
It's easy---
1. In a small pan melt 1/3 tablespoon butter and 4 cups of mini marshmallows on low heat. 
2. Once it's melted remove from heat. 
3. Add rice krispies.
4. Butter a 9x14 dish and pour inside the dish.
5. pat down with a spatula and cut into squares.
Best if eaten the same day
Here's what you get: YUMMY!
