Menu Monday

This week is a little crazy at our house so the menu is a little....well...short. I didn't really "find" them anywhere--I just threw them together. It's a few of my husband's favorite's because I just love him so hopefully you'll enjoy! 


Monday- Southwestern Chicken, Mashed Potatoes, Peas, and Homestyle Mac & Cheese
I used:


Here's what you need:


Before
It's kind of simple---the chicken is the only thing that takes time to bake. Everything else is listed on the package, but as you can see from the picture below---the husband enjoyed it! 
After
Tuesday- Chicken Pesto Pasta & Mixed Salad- this is a pasta I have been fixing for years. I added pine nuts when a friend gave me the idea (Thanks Summer) 
Here's what you need: I forgot to get out the chicken---

1. Boil water for noodles
2. Cook chicken in separate saucepan with olive oil (sorry it's not pictured). Add minced onions, and garlic salt. Cook until browned. 
3. Add the pine nuts---boy I forgot to picture a lot. Ooops. 
4. When water is boiling add the noodles until soft. Drain the water. 5. Combine the noodles and the chicken. 
6. Add the pesto. 
7. Prepare the salad & add almonds on the top and add desired dressing. 
8. If you like you can also severe this dish with garlic bread. Yum! 

Dessert Monday- Rice Krispie Treats- since I have some extra time I have been trying to prepare a special treat for my husband on Mondays. Today's treat was rice Krispie Treats. He LOVES these! 

Here's what you need:
Let me just add that you can't use the "good for you butter" it doesn't work out. 
It's easy---
1. In a small pan melt 1/3 tablespoon butter and 4 cups of mini marshmallows on low heat. 
2. Once it's melted remove from heat. 
3. Add rice krispies.
4. Butter a 9x14 dish and pour inside the dish.
5. pat down with a spatula and cut into squares.
Best if eaten the same day
Here's what you get: YUMMY!

What I Loved About New Orleans

I've decided that I really LOVE to travel!  One perk of being home with Noah during his first 4 years is that we have been blessed to go to some amazing places!  New Orleans is definitely one of the most interesting cities I have ever seen!  Here are my favorite parts of the city...


1. The FOOD...wow, we did not have a bad meal the whole time and I tried some new foods too!  That's HUGE for me because I am a tad bit picky (ok, hold the tad).  I tried alligator, boudin, and authentic red beans & rice!  YUM!!!

2. The French Quarter........I love all things from France (the architecture, food, language, art) and this part of New Orleans reminded me so much of Paris!  It was awesome!  The French Market was kind of an open-air flea market filled with little cafes, fruit stands, and treasures.  

3. The breathtaking Southern elements.........My favorite tree is the Live Oak and I have always been fascinated by plantations!  My son's middle name is Rhett for goodness sake! So, one afternoon, we travelled to Oak Alley Plantation which was gorgeous!

4. The gators.......not necessarily my favorite part, but it was Noah's and I loved seeing him so excited!  He and his Daddy went on a Cajun Swamp Tour where he got to feed alligators from a boat!  Who knew gators love a snack of hot dogs and marshmallows?  

That's just a snapshot into our week in NOLA, I hope you enjoyed!

I am very thankful to have him in my life. We've been together for 9 years and have almost been married for 5 years in July. I had surgery Friday and he's been just a fabulous care taker!! I am beyond blessed.

No Menu, But Free Calendar!

Greetings from New Orleans!  My family is tagging along on my hubby's business trip this week and we're having fun shopping, touring, and EATING all the delicious food!  


We started our morning here, at Cafe du Monde in the French Quarter.

And enjoyed these beignets for breakfast........one word...........AMAZING!!!  

If you want to make your own at home, HERE is a simple recipe that only requires can biscuits, powdered sugar, and oil. 

So, I obviously do not need a menu plan this week, so instead, I thought I would just give you guys the FREE Printable May Calendar Set.  Sorry it's so late, but I hope you can still use it.  Enjoy!
